Did you know it's possible to make keto-friendly pancakes? This delicious recipe makes the most tender (and low carb) stack of pancake goodness.
- 1 packet Noatmeals (we used Blueberry + Spice)
- 1 egg
- 4oz of cream cheese (softened)
- 1/4 cup almond coconut milk
- 1tsp of baking powder
- 1 cup almond flour
- Maple syrup to taste
Blend all ingredients.
Heat a lightly oiled griddle or pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.
